In the debut episode of WDET’s new podcast “Essential Cooking,” hosts Ann Delisi and Chef James Rigato explore the spicier side of Michigan life.

“In the Midwest, one of my biggest complaints about home pantries or home cooks is our lack of spice,” says Rigato. “Most cultures of food explore spice. However, Midwestern America, we are terrified of it.”

Rigato says the first step for Midwesterners eager to dip their toes in next level cooking is to up your spice game. And it’s not just eating habaneros. Mustard, horseradish, ginger, garlic — getting the flavor profile of aromatic heat and incorporating that into your meals.

Remember: When in doubt, spice is exciting, not scary.
